Mixed Bean & Cherry Tomato Casserole  Free on Green

Serves 4 ready in about 30 mins.

2 Onions, sliced

2 large carrots, peeled & cut into small chunks

2 yellow peppers, deseeded & cut into small chunks

7 oz cherry toms, halved

2 celery sticks, thinly sliced

7 oz soya beans

7 floz passata

7 floz veg stock

3 crushed garlic cloves

2 tsp dried oregano

1/2tsp sweetener

1 tsp chilli flakes

2 tsp fennel seeds crushed

1 tsp coriander seeds crushed

S&P

Handful of fresh chopped parsley

1) Put veg, mixed beans, soya beans in flameproof casserole dish, toss to mix well.

2) Mix together the passata, stock, garlic, oregano, chilli, sweetener, fennel, coriander, season and pour into casserole.

3) Stir to mix well and bring to the boil, reduce heat to medium and cook for further 30 mins or until veg tender.

Remove from heat and serve sprinkled with fresh parsley.

This dish is easy to make and a real winter warmer. Very filling and lush with a large jacket potato. 10/10
